Spicy and juicy, Turkish lamb kebabs made from tender lamb mince with meat to fat ratio of 80:20. A spice blend of roasted and ground cumin, coriander seeds, chilli flakes, cinnamon, peppercorns and Himalayan pink salt give a right balance of flavors.
Pan seared on high heat to lock in the juices and to get that maillard browning on the outside, and then finished in oven at a lower temperature to cook through. Sauteed onions, garlic, fresh mint, coriander, soaked black currants and lemon zest add to flavor profile.
Served with chilled Greek yogurt, drizzle of honey, pomegranate, black currants, mint, lemon and roasted & crushed coriander seeds.
