Ripe tomato poached with fennel. Served over apple wood smoked cottage cheese disc with balsamic vinegar, extra virgin olive oil and Pesto di Noce (Walnut pesto). Poached and well seasoned tomato partially coated with chili peanut crumble and basil peanut crumble. Served chilled. A refreshing and cool, summer salad for this season.
